Description :
Jau flour, commonly known as Barley flour, is a wholesome, ancient flour milled from the whole grains of Hordeum vulgare. Visually, it presents as a soft, off-white to light beige powder with a fine texture that closely resembles whole wheat flour. It carries a wonderfully comforting, sweet, and toasty aroma, accompanied by a distinctively nutty and slightly malty flavour profile that adds a rich, rustic depth to a variety of culinary creations. Nutritionally, Jau flour is highly celebrated as a natural cooling agent and a metabolic powerhouse. It is exceptionally rich in beta-glucan, a unique type of soluble dietary fibre that has been scientifically proven to help lower cholesterol levels, support heart health, and slow down glucose absorption. Because of its very low glycaemic index, it provides sustained energy without causing sharp spikes in blood sugar. Furthermore, it is packed with essential micronutrients, including selenium, magnesium, chromium, and plant-based proteins, making it an excellent dietary staple for weight management and digestive wellness. In the kitchen, Jau flour is traditionally valued for its versatility and ease of digestion. While it does contain a small amount of gluten, it is not enough to provide elasticity on its own, so it is often blended with other flours to make soft, wholesome flatbreads (rotis) or rustic artisanal breads. It is the foundational ingredient for Sattu blends and comforting, traditional breakfast porridges (ghat or malted drinks) that are highly consumed during warm months due to their hydrating and cooling properties. Additionally, its natural binding ability makes it an excellent, flavour-enhancing thickener for rustic stews, soups, and gravies. Location : Punjab, India
